Tonic Chardonnay 2018 continues the great vintage run that the Adelaide Hills area is currently experiencing. Long, warm summer days gave this Chardonnay a excellent ripening conditions. Picking occured earlier due to the warmness of the year in order to preserve the lightness and freshness that Chardonnay so desperately needs at times. The fruit was foot stomped and the juice was allowed to spend 24 hours on skins, giving it enough time to develop some interesting textures and flavours. It was then basket pressed into old French oak barrels for its fermentation. Malolactic fermentation was not used and the wine was not fined or filtered.
Tonich Chardonnay 2018 widely drinkable. A savoury grilled nut flavour to start, which then develops into flint and pickled ginger, alongside some citrus notes, mainly lemon and grapefruit. Textures is here, however cellaring is an option for those who wish to.
Tonic Wines is a small batch project being undertaken by two friends with similarly nerdy wine habits. Glenn is an experienced winemaker with genuinely practical skills…actually quite a lot of them. Dan’s background is in wine drinking, talking and educating and after a recent stint as a wine-stained cellar hand he now knows about ‘righty-tighty, lefty loosey’ but that’s about it.
Tonic doesn’t really believe in boring wine. It’s a waste of time for your senses and deprives you of a memorable experience. Don’t short change yourself; life is too short. Only drink wine that makes you want to have a second glass.
The name Tonic comes from the apothecaries, merchants, and botanists of yore, those who created remedies and delights directly from the Earth. The individual spirit in which these people from then possessed is what Tonic replicates today – wine that is truly them and exactly what they envisioned it should taste like.
